Well, she DID get excited at the idea of Taco Tuesday before the Dazzlings hypnotised everyone in the cafeteria, so the fans took that one instance as meaning she loves tacos

Just like how they made Pinkamena an entirely split personality of Pinkie Pie all because she went crazy in Party of One and it has never happened again since that one episode
